As Executive Chef at Snowbird Mountain Lodge, Mandy created memorable food and wine experiences.
Recipes include 2022 Snowbird Mountain Lodge recipes and secret family recipes, including the most ordered dessert, “S’mores Cake”, and her secret for making the perfect cake. While it opens with dessert, the book adds depth with sides and sauces and the perfect pimento cheese. And you will love her Southern take on the traditional French dish “Coq au Vin.”

Life has afforded many memories of food and flavors across the globe. Prior to Snowbird, I was a food and travel writer. I have always had a passion for travel, and enjoy “cloudsurfing” (aka flying) all over the world.
One of my favorite meals was around a plastic picnic table in the middle of a Mayan family’s yard with pigs and chickens running around. They served tortillas cooked on the lid of a metal garbage can. An awe-inspiring moment was dining at the Jules Verne on the top of the Eiffel Tower in Paris
I’ve attended many James Beard Celebrity Chef Dinners, and hosted one. I’ve experienced behind the scenes art and magic of Chefs such as Sean Brock, Micheal Voltaggio, Anthony Lamas, William Dissen, Jonathan Waxman, Kristen Kish, and more.
My love for food is both passion and play. I enjoy the ambiance and flavors of new, noteworthy, and independent restaurants. As I stepped into the role of Executive Chef at Snowbird Mountain Lodge, I knew I wanted to create food that was memorable. Really good, consistent, and part of the magic of Snowbird.

Recipe- Brownies served at Snowbird’s BBQ celebrations.
1 c. shortening
2 1/2 c. sugar
5 eggs (slightly beaten)
2 tsp. vanilla
1/2 cup cocoa
2 c. flour
1/2 tsp. salt
Sift dry ingredients, cocoa, flour, and salt and set aside.
Mix together shortening and sugar.
Add eggs, slightly beaten.
Mix in vanilla.
Add the sifted flour, cocoa and salt.
Grease a 10X13 pan with cooking spray.
Spread mixture on pan.
Bake at 325˚ for 25 minutes.
